Dark chocolate layer
  • 50g butter, chopped
  • 100g dark chocolate chopped

  • 110g dark brown sugar

  • 1 egg

  • 75g plain flour

  • 60g sour cream

White chocolate cheesecake
  • 60ml double cream

  • 125g white chocolate

  • 250g cream cheese, softened

  • 75g caster sugar

  • 1 egg

Merrily mulled jelly
  • 3 sheets gelatine

  • 350 ml Merrily Mulled (to taste)

Milk chocolate mousse
  • 150g milk chocolate chopped

  • 180ml double cream


1.Preheat oven to 160C. Unlock the base of an 8 inch springform pan cover with baking parchment and extend outside the pan . Lock the ring over the base grease the pan and line the sides extending above the sides.

2. Make the dark Chocolate cake, stir butter and chocolate in a small pan over low heat until smooth. Remove from heat, stir in the sugar then egg, flour and sour cream. Spread into pan and stand until needed.

3. Make the White chocolate cheesecake, stir cream and chocolate in small pan over low heat until smooth, cool. Beat cream cheese and sugar in a small bowl with electric mixer until smooth. Gently beat in cooled chocolate mixture, then egg. Pour mixture over fudge cake in pan then bake for 30 minutes until the centre is set and has a slight wobble. Cool in the oven with the door ajar. Refrigerate.

4. To make jelly, soak the gelatine sheets according to the instructions and combine with the Merrily Mulled. Pour into a medium sized jug and refrigerate approx 30 minutes until mixture slightly thickens (consistency of custard). Pour mixture over cheesecake layer and carefully smooth and refrigerate until set.

5. To make milk chocolate mousse, stir chocolate in a heatproof bowl over a small pan of simmering water until smooth. Cool. Beat cream in a small bowl with electric mixer until soft peaks form, fold in cooled chocolate. Spread mixture over jelly in pan and smooth the surface. Refrigerate 3 hours or overnight.

To decorate temper some dark chocolate and create a thin sheet and break into shards, place randomly and then dust with cocoa powder shaken from a small sieve.

A real winter treat.
