Ideas for Sultanas or Raisins Soaked in Merrily Mulled

  • Healthy bran muffins

The obvious is as an ingredient in your apple strudel or apple crumble, as a topping with ice cream or a delicious addition to bread and butter pudding or our very own special almost healthy Bran Muffins

Ingredients

  • 200g plain flour

  • 100g bran (from a health food shop)

  • 1 tsp baking powder

  • 1 tsp cinnamon

  • pinch of salt

  • 200g soaked sultanas or raisins

  • 200g dark brown sugar

  • 150ml vegetable oil or melted butter

  • 250ml plain yogurt and milk mixed (or any dairy in the fridge needing used!)

  • 1 egg

Method:

Preheat oven to 180C and put 12 to 14 paper cases in muffin trays Put flour, bran, baking powder cinnamon and raisins in a large bowl gently mixing to combine well and cover all the dried fruit. In a smaller bowl place the liquid ingredients and brown sugar. mix to combine well. Add the wet ingredients to the dry and fold gently with a large spoon until well combined. Fill the paper cases two-thirds full and bake for approx 20minutes. Allow to cool in the pan and enjoy for breakfast or a tea time snack.
